Me ha gustado mucho la paleta.
Es la primera vez que me gusta el sabor de la parte grasa. Por lo general suelo quitarla, pero en este caso es incluso más sabrosa que el parte carnosa.

Spalla eccezionale, dal sapore rotondo e pungente nello stagionato, grasso sublime. Da acquistare solo se amanti di prosciutti più secchi tendenti all'umami. Dalla spalla oltre al sapore deciso e avvolgente ricaverete fette strette e con meno "carne" rispetto ad una coscia ma il sapore è nettamente superiore!
