El jamón es MUY bueno. Pero…. a pesar de ser un GranReserva, creo que le faltaba curación. Salió, especialmente algunas zonas, muy tierno-crudo. En parte lo estamos resolviendo a base de cortarlo en seis mazas y dejarlo secar envuelto en un trapo.

Me decidí por este jamón porque no tiene ingredientes artificiales. Tiene un buen punto de maduración y un buen sabor, temía que, al ser reducido en sal resultara insipido, pero no ha sido así, está muy bueno. Como es dehuesado resulta mucho mas fácil de cortar.
