Es un lomo bajo de novillo de Wagyu, con un bms 7 (grado A4) cuando en la imagen da la impresión de ser al menos un 9 (grado A5). He comido Wagyu (no hamburguesa sino carne sin procesar) en NY, Chile, Japón y ahora esta. La carne es buena, está al nivel de la que encuentras en Chile, pero lejos de la de Japón.
Sin embargo al ver las fotos esperaba un índice de infiltración de grasa mayor, tenía unas expectativas muy altas que, sin desmerecer la pieza recibida, no se han cumplido.
