Excelente AOVE. Empecé a comprarlo hace 4 años. Desde entonces en casa sólo consumimos este aceite de oliva. La diferencia con los aceites comerciales es brutal, es otra liga.

Esta cosecha no ha sido muy fructifera en litros totales pero la calidad sigue siendo excepcional. No es el típico picual con mucho amargor, esta muy equilibrado y se nota el cariño que ha tenido el olivar. Como todos los grandes aceites, es de finca, recogida en su fecha óptima, aceitunas recogidas mediante paragüas invertido sin que toquen el suelo (para evitar fermentaciones espontaneas y demás) y la extracción en frío de verdad. El formato de bolsa mantiene las propiedades aislandolo de la luz, oxigeno y en cierta medida del calor. Lo utilizo habitualmente para cocinar. Este año 2022 además está bien arrimar un poco el hombro con los agricultores, que no van a tener tanta producción y si muchos gastos. Si no les apoyamos no van a poder seguir elaborando un producto tan maravilloso.

No es muy grande, pero si muy gruesa. Es muy facil de limpiar con un paño, y conservarla dandole un poco de aceite para impermeabilizarla/hidratarla. Se puede usar del mismo aceite de oliva, yo uso de lino por costumbre para estas cosas.

Nunca había tenido una tabla tan bonita. La madera de olivo absorbe muy poco y conserva muy bien el filo de los cuchillos.
