This Pata Negra shoulder is magnificent, the flavour of Bellota is all over the meat. Juici and with tha rights amount of fat. Alex recommended this Cordoba origin one and it's been a succés. Thanks, you have won a customer forever!

Good taste but a bit disappointed as 30% of meat was dry and hard - not eatable. Not really sure why but probably because the shoulder was more close to 3 years of curying time than 2 years.
